Hydrogenation of Oils

Oil is hardened by hydrogenation to produce margarine. Hydrogen gas is bubbled into oil heated to about 200oC at the pressure of around 5atm. Finely divided Nickel is used as catalyst. The hydrogen adds along double bond of the carbons of the unsaturated compounds in the oil.
